Manchego is a sheep’s milk cheese hailing from the La Mancha region of Spain. It can be aged anywhere from 2 months to 2 years, giving it a firm consistency. Manchego is approachable for every palate, as it remains a classic go-to for cheese connoisseurs, a mellow intro for newbies and an easy-to-find indulgence at your local market.
