Ossau-Iraty (sheep milk; France) paired with Smoked Baltic Porter

Ossau-Iraty is a French cheese full of a delicious, nutty, robust taste if it is produced during the period from June to September when the herds move up to the high mountain meadows. Its fragrance is reminiscent of toasted hazelnuts, and its taste encapsulates sweet, buttery flavors that a great sheep’s milk cheese can deliver.

Smoked Baltic Porter delivers a seductive, smoky smoothness that complements this cheeses’ nuttiness and makes this a pleasant match for a holiday cheese board (drop the needle on some Louis Armstrong vinyl to complete to mood).
