Eater: Tom’s Urban Shutters on Larimer, Readies for Airport Opening
“The original Tom’s Urban on Sunday closed its prime corner location on Larimer Street, a verdict that was reached following the finale of the lease term.
The American diner concept opened downtown in 2012 as Tom’s Urban 24, the brainchild of Tom Ryan and Rick Schaden, co-founders of Smashburger. A new Tom’s is expected to launch inside the Westin Hotel at Denver International Airport this summer, while others are scattered around from Las Vegas to Connecticut and Portland.
Initially, the concept served around the clock, but it whittled down its hours of operation and hacked off the numbers at the end of its name in 2014, despite community calls for more late-night dining options.
The DIA outpost will emerge in the 9,500 square feet set aside on the fifth floor of the hotel, with outdoor seating and views of the Front Range. Tom’s has partnered with Tivoli Brewing, and the new restaurant will be called Tom’s Urban Kitchen and Brewery with a complete brewhouse operation. The fiercely challenged airport deal was announced in early 2016, at which point Midfield Concession Enterprises was a partner. Among the local beer businesses vying for the DIA project were Wynkoop Brewing, Great Divide Brewing, Oskar Blues, and others.”
